The sugar cookie,  its a lighter version of the standard Shortbread biscuit,  it is flavoured mainly with vanilla, but can be any flavour.  This cookie has been about since the early 1900's but with a slightly better recipe perfected over the years to make today's light, buttery vanilla cookie just perfect.
